Tutorial Tuesday: Caramel Popcorn--great for gift giving!



i love making caramel popcorn. My grandpa LOVES it so, in honor of him, today's tutorial is how to make it! The finished product will be sent to him ASAP but this popcorn is also great to give as gifts--Mother's Day, end-of-year teacher's gifts, Christmas/Holidays, etc. please note: caramel sauce is incredibly hot. please use caution when handling this hot mixture! burns can easily happen if you are not careful!

You will need:

*2 sticks butter
*2 cups brown sugar (I usually use light but you can use dark, too)
*1/2 cup corn syrup (either light or dark, as well)
*1 tsp salt
*1 tsp vanilla
*1/2 tsp baking soda

and, of course:


*1 cup Popcorn kernels

optional are:



*Nuts (pecans, almonds, walnuts etc.)
*Semi-sweet chocolate chips

2 large bowls, 2 spatulas, 2 large baking sheets (treated with cooking spray), and a paper bag treated with cooking spray:





Heat oven to 250

Pop the popcorn--I use either an air popper or a big pan on my gas stove top. If you have a gas stove and a no-stick big pan, you can pop the kernels over high heat without using any oil. Alternatively, you can coat the bottom of the pan with oil, wait for it to get warm and then CAREFULLY add the kernels to the pan--don't burn yourself on the hot oil! (aside: I think that you get puffier popcorn if you use the air popper, though, so that is what I usually use.) Since most people might not have an air popper, though, i used a pan for this tutorial:



Pour the popped popcorn into the prepared bag and, if you are using nuts, add them. Close up the bag and shake to distribute the nuts and kernels



Melt the butter, brown sugar, corn syrup and salt in a thick-bottomed pan (we use calphalon and it works great), stirring continuously.



Once the mixture starts bubbling, stop stirring and let it boil over medium heat for 4 minutes--NO STIRRING! (note that I have my vanilla and baking soda ready to go--just don't spill the vanilla like i did!)


Pull from the heat after 4 minutes and add the vanilla and then the baking soda. Stir the mixture really well--you want to get all the baking soda mixed in so that it can "foam". It should look like the first picture after 4 minutes of bubbling and look like the second picture after adding the baking soda and vanilla:


Pour the caramel over the popcorn nut mixture and rapidly "toss" so that you can coat as many pieces as possible.


Scrape all the caramelly goodness off the sides of the bag, too! The more you coat the better!

Once coated, put the popcorn on the 2 baking sheets and place in the oven for an hour, stirring every 15 minutes. I also alternate rack positions every 15 minutes but that is optional.


Let cool for 30 minutes and then pour into a big bowl with the chocolate chips. If you are giving away popcorn as gifts, tie up individual bags of popcorn. Everyone will love it!

the joys of coming home...

One of my favorite things to do every day is check my mail. There is something thrilling about walking down my apartment hallway with C to check and see what goodies might be hiding in our mailbox.

When we go on vacation, I always stop our mail if we will be away for more than two days. So, it goes without saying that the day the post officer drops off our mail is incredibly thrilling for me (oh yes, the simple pleasures of life!). If you ever get lonely and want some mail, you should try stopping your mail for a week. When it arrives all bundled up at your door it is like a landfall of happiness!

Or maybe I'm just weird.

Anyway, when our mail came yesterday, i received two gifts that I won on other blogs. Both of them were made by fabulous Etsians. I immediately put them to use. When we were stuck in the car waiting for a thunderstorm to pass before going to Whole Foods, I decided to snap a few pictures of them in action. The pictures definitely don't do either item justice (taken on my iPhone) so be sure to check out the real deal on their respective Etsy stores!

{recap}

i've posted three times since i've been back but haven't done a recap yet...mainly because sooo much happened in a week i dreaded writing about everything!

I know most people wouldn't want to read too much, anyway, so I'm just going to do our week in pictures (because, in my opinion, a blog is worthless without photos!)

{Saturday}
started bright and early with our 1st Peachtree in Training run. We have a great team!


drove to the 'burbs, celebrated J's b-day with ice cream cake and then left C with my parents. She spent the night with them and we were away from her for more than 20 hours


Headed to the Inman Park Festival, watched the crazy parade, caught up with friends, and then had a wonderful dinner at the Porter Beer Bar. Delish!


Headed to the Four Seasons to redeem a prize I won at a local road race. Of course, the Prom was happening at the same time. Awesome. Don't *really* miss those days (not that I went to prom anyway!) I tried to snap a picture with my phone to show you the crazy dresses they wear these days. Scandalous! We also ran into Charles Barkley at the registration desk. Neat-o.


{Sunday}
Picked C up at church--she was entertaining the wonderful Information Booth workers (Mimi and Poppy included)--and hit the road to Michigan


Made a decently-long stop so that C could stretch her legs and get the cranky out. Love the Midwest people--C made tons of friends at Culver's and I feel like we knew them when we left the restaurant! She also faced a food choice dilemma: junk food or healthy food. Guess who gave her the french fry?


{Monday}
made it to Hillsdale in record time. (I don't want to know how we got there that quickly!)

J's mom stocked the fridge (thank you!) so that i could make all of C's baby food--stayed up until 12:30 Monday to make it all but I didn't want her to have only french fries to choose from. Ha!

While visiting J's mom's new lake house, I tried to get some shots for the I Heart Faces Week 16 theme (reflections) but didn't get very far.


We then headed to a surprise 30th Birthday Party for J that his mom put together--former professors and the President of the college were in attendance. It was a very nice dessert reception held in a former train depot, renovated to be a gorgeous Bed and Breakfast. C, in her pajamas, especially loved the giraffe:

Last day in Hillsdale. J's mom treated us to a new restaurant. Check out the item description under the Veggie Tempura. Only in Hillsdale. C took the high road and ate cucumbers instead of fries. Good girl!


{Friday}
On the road again. Keeping C occupied was a full-time job.


We left very early but this time we did not make record time. Tornadoes, crazy wind, and torrential rain greatly disrupted our trip.


Found out my Grandpa has a brain tumor. Cried and cried and still am crying.

We took a much-needed and fun detour in Chattanooga to see J's dad and Jen. Finally hit the door of our apt. 13 hours later. Phew!

{Saturday}
C, deciding to welcome us home woke up 3 times throughout the night. Awesome. It also rained and poured throughout the night. Sadly (?) the road race I was supposed to run was not cancelled as there was finally a break in the rain. So off we all went. It turned out a lot better than I thought.


We came back home and wanted to walk to the grocery store. Then we saw the rain clouds--they were black! So, we ran home and hopped in the car. Good thing we did! We had to hang out in the parking lot for 20 minutes just waiting for it to subside a little bit.


J entertained C while we waited. Scary:



{Sunday}

J left! Sadness. He will be gone until Friday, May 15th. I just have to finish by posting this sweet picture, taken last Monday. C will be especially sad during J's absence.

I Heart Faces: Week 17



I was so sad to miss last week's I ♥ Faces contest but I'm happy to be able to participate in it this week! Week 17 is all about hats.
Adult Entry

Last Saturday, J and I went to a crazy festival complete with a funky parade. We went last year and kicked ourselves for not remembering our camera--you cannot believe the costumes they sport in the parade! This year I brought my lovely Canon cyber-shot camera along. Maybe next year i can visit the festival with a fancy new "real" camera...we'll see about that!

Anyway, I snapped lots of pics of the marching band and their hilarious outfits. There were so many to choose from but most of the pictures' backgrounds were way too busy. My favorite hat was definitely the woman who had a sock monkey on top of her hat! Hilarious!

Sadly, those didn't turn out too well but the chicken-hat woman did. J liked the brightness of the photo I'm entering, but I was partial to this slightly more subdued one. In the end, I obviously deferred to his opinion as he has taken photography classes and his dad is a professional photographer!:




Kid Entry

C is well known for all her huge flower hats. Sometimes even i don't recognize her without her token hair accessory. There were so many fun photos of her from when she was younger and I had seriously the hardest time figuring out which one to use. In fact, I published one and came back and deliberated for another hour and finally decided on this photo. 10 Things you're "Dying" to know...right?! yeah...

Slowly catching up at home and reading my favorite blogs...when I found that sweet Kelly at Our Lincoln Log tagged me for a fun post entry. Thanks, Kelly!

Before I get bogged (blogged?!) down, I'm doing it right now!

1) What is your current obsession?
i am currently obsessed with Picnik and making my pictures pretty enough to enter I ♥ Faces contests and interesting enough to become my blog background!

2)Which item of clothing do you wear most often?
Really long tanktops with built-in bra support. I have a short torso and I think that these tanks help elongate it and, bonus--it covers up my midriff (i have this weird fear of having my belly button showing). I also love them because they are great layering items. I wear them almost every day!

3)What's for dinner?
Oh the joy of coming home to an empty fridge. Dinner was a hodgepodge of whatever we could find in the freezer. Highlight? Cookies and Cream FroYo. Delish

4)What are you listening to?
Currently, I'm listening to a Harry Potter movie playing in the background. Unfortunately, I am most definitely not listening to the voices in my head telling me to put down the computer and put away my clothes!

5)Say something about the one who tagged you...
Kelly is a super sweet new mom who also cloth diapers her darling son. Her love and adoration for both her husband and her son is apparent in every post!

6)Favorite vacation spot?
When we lived in England, J and I took an amazing vacation to Spain. We loved every minute of it, especially our time in Ronda. If I analyzed this question properly, though, i think that it is asking about a frequently visited vacation spot--and that would most definitely be in Naples, Florida, to visit my grandparents.

7)What are you reading right now?
Catching up on all my blogs! I am really looking forward to reading a new book i just checked out from the library ("Twelve Extraordinary Women") while also trying to read "Potty Training Your Baby" and "The Diaper Free Baby"

8)4 words to describe yourself:

9)Guilty Pleasure?

10)First Spring thing to do?
In Boston, Spring lasts a day. It came in late and then it was Summer. In Atlanta, Spring also lasts a day but it comes in early! So, when Spring sprang, the first thing we did was take a walk to the park and admire all the fresh green sprigs budding on the trees.

We're back!

Well, friends, we are back. And my, oh my, do we have a lot of updates.

I plan on regularly posting starting on Monday. Until then, I'll be tweaking my layout a bit more and getting my Monday-Friday post formats down.

Sadly, however, the main reason for my delay back to bloggy-world is not due to layout or format changes.

On Friday, my family received extremely sad news. My grandpa, who is like a second father to me and the twin, has a rapidly-growing malignant brain tumor. They operated on it yesterday and will know more on Monday when they speak with the pathologist. Until then, I'll be praying for peace and hope. And, I hope you might join me in doing so.
